February wine club: Why are vessels so important in wine making

An exploration of vessels looking at wood, concrete/ steel and clay?  Across wines of a similar profile. Modern wine making is not so keen on oak, but what is the difference between stainless steel and clay. And why on earth would you put wine in concrete? Olivia Tittley-West guides you through the reasons and will explore the different flavour profiles and how they are influenced by the vessels used and combination as often there is more than one material in a wine. A one-course supper will be served.
